I was inspired to compile this cookbook when I found out the answer to a life-long list of health problems and food allergies—I HAVE CELIAC DISEASE. Like many others out there, it took years of misdiagnosis and living at less than I knew I was. I was diagnosed in the summer of 2006 while travelling across Canada in my husband’s home town of Sudbury, Ontario (where they have very intelligent doctors, I might add!). 10 years prior to that, I had been diagnosed with a huge list of food allergies. After finding out I had Celiac Disease, I went out for my last Harvey’s burger and then sulked for a few weeks. I then pulled out our family binder of hand-written, adjusted recipes and started to it. I wanted to take the 10 years of hard work we had already done (one of my allergies was wheat) and help other people have a batch of great recipes to start with. My cookbook takes a fresh approach to eating gluten-free. I do not focus on making breads and cookies—if you want that, go to Cathy’s Gluten Free Creations—everyone raves about her flour mix and goodies. What I do focus on is healthy, wholesome, delicious recipes that the entire family will enjoy. I believe that a solution as easy as eating gluten-free should be embraced by the entire family and that they should not have to sacrifice to do it. A Celiac is Coming is inspired by my Aunt Lila who was able to sum up how difficult it is to cook for someone who has food challenges. She just didn’t know what to make when I was coming to visit. This book is great for the newly diagnosed, their friends, and family, as well as anyone who wants to eat more healthy and without the additives that prepared foods carry. |
